Tapella Rolls Out Special Menu for Madrid Fusion Manila
Madrid Fusion is said to be the biggest event centered on gastronomy in the world today, and foodies are just excited to officially welcome its first event in Manila! Since this is the launch of the masters behind its modern culinary techniques with an event of this magnitude outside of Spain, this is certainly the most awaited opportunity for local chefs to showcase what the Manila food scene has to offer.
Spanish restaurant Tapella, popular for its tapas and paella that go well with its selections of fine wines and spirits is participating in the month-long ‘Flavors of the Philippines” with a special menu that highlights local ingredients presented with a world-class versions that gourmands are sure to enjoy. Executive Chef Robert Spakowski is not only introducing new Spanish-style dishes, his culinary masterpieces showcase the best and most exotic ingredients of the Philippines.
The creative menu includes Pollo Frito, Fried Garlic Chicken served with salt-crusted baby potatoes and mojo rojo and verde dips with a side salad of greens drizzled with a flavorful tamarind dressing. The Filipino pork dish praised by international Chef Anthony Bourdain makes an appearance in the Tapella lineup as Huevos con Morcilla y Sisig – sautéed pork sisig and morcilla topped with crunchy garlic and spring onions on a bed made with two sunny-side-up eggs and a nest of shoestring potatoes.
The mesh of Spanish and Filipino cuisine is illustrated in the Hambuguesa de Chorizo Mixta, a combination of the distinct flavors of Chorizo with Vigan longanisa in a patty topped with a sunny side up egg, kesong puti and a dollop of sour cream cheese spread, all layered on a Pinoy version of the English muffin bun. Round out the gustatory experience with a toast of sparkling Averrhoa Bilimbi Sangria which incorporates the typical white sangria elements with an interesting Filipino twist of Kamias.
